Cheese quality 2/2
It had the perfect amount of stretchiness in the middle, crispness around the edges, and salt balance. It mingled with the olives, causing a delicious studded effect. The cheese did become a bit overpowering at the end of the dish, but we don’t think that should detract from the overall quality.
Consistency 2/2
Although there were a few naked chips at the bottom, they were used for scooping the remaining toppings. It all balanced quite nicely, not too much of anything. This also presented a nice opportunity for reprieve from all of the flavors so as to reset the palette (a pretentious way to say that the chips also taste good by themselves).
general ingredient quality 1/2
Although tasty, none of the toppings felt particularly fresh. It could have used a little pop of pico on the top to brighten things up, or freshly chopped jalapeños. As it stood, the toppings were a bit heavy with no real lightness.
Chip inTegrity 2/2
These tortilla chips were made in-house and boy do they know how to cook em! Just the right thickness, good for scooping, didn’t shatter or bend when weighed down with toppings (and these were wetter nachos). These chips could have sunk these nachos, but instead they gave them wings.
Flavor 1/2
That classic nacho taste, little bits of spice here and there, married wonderfully with savory, salty black olives. Tasty, but nothing special. Again, could have used some freshness.
